Poppy Seed Bread with Orange Glaze
Description
This wonderfully rich tasting poppy seed bread is a great dessert. I make the mini loaves and it can be frozen for up to a month.

2 regluar loaves, 6 mini loaves, or a ton of muffins
FOR BREAD: - 3 eggs
- 3 cups flour
- 1-1/2 teaspoons salt
- 1/2 teaspoon baking powder
- 1-1/2 teaspoon vanilla
- 1-1/2 teaspoon butter flavor extract
- 1-1/2 teaspoon almond flavor extract
- 1-1/2 teaspoon poppy seeds
- 1-1/2 cups milk (skim for a lighter loaf)
- 2-1/4 cups sugar (or Splenda for baking)
- 1-1/3 cups vegetable oil
GLAZE INGREDIENTS: - 3/4 cups powdered sugar
- 1/4 cup orange juice
- 1/2 teaspoon almond flavor extract
- 1/2 teaspoon butter flavor extract
- 1/2 teaspoon vanilla extract
Methods/steps
Mix all the bread ingredients together (beat with mixer or by hand). Pour into greased and floured baking pans. Bake at 350 degrees 45 to 60 minutes. (Makes 2 regular loaves or 6 small mini loaf pans). Mix all of the glaze ingredients together and spoon glaze over loaf while hot. Enjoy!

Additional Tips
You can also make a lot of breakfast muffins with this recipe. What is nice about the muffins is that you can freeze them and then get a few out at a time for a quick tasty breakfast treat. Muffins take about 30 minutes to come to room temperature. Serve with Coffee.
